I did some tests and as predicted I got a 'file to big please add more
space' message when I tried to copy some files to my USB drive. Unfortunatly,
no error logged in event veiwer.
The user who did this was a temp for the day and decided to tidy the data.
It has caused a few headaches!

The server is an old win 2000 server. It primary use is as a file
server. I thought it was a long shot. I might do some tests and see.

Some data has been lost on the a server and we are trying to piece
together what has happened. This is what we THINK may have happened.
We have a customer who decided to 'Move' some folders from the
server onto her memory pen (She should have copy/paste but anyway).
The server has one shared folder called data (5Gb) which consists
of all company files and gets backed up. The folder data was then
moved to the memory pen (2gb space) using a users machine and then
due to the size of the pen it hit it's limit and only some data was
moved (about 2gb) and the rest was left on the server (3gb). The
data is then deleted from the pen.
This would explain that about 1.9/2 Gb of data is lost from the data
folder on the server. To confirm our theory, I was wondering if
windows xp logs an event when a USB hits it's size limit or if a
move was incomplete.
Any help would be appreciated.

I don't believe this will be logged, but you might try a test. You
will likely see a popup message when your destination drive is out
of space.
If you've got W2003 with VSS enabled, and this data was on there,
you may not even need to go back to tape - volume shadow copy
services saves a lot of work.
