"Easily" depends on your skills and experience. I would
install a proper boot manager, e.g. XOSL (free!), then
install Windows Server on a separate partition and get
XOSL to hide the two partitions from each other.
Best to practise with XOSL on a spare disk before
going ahead. If you do the wrong thing then you will
lose your WinXP installation.
