Gestures?

I'm runnign windows XP Pro with a usb tablet as well as a wireless touch
screen and was wondering if anyone knows of any gesture software for
controlling programs? Also what about voice recognition software? I was
already recommended Dragon Dictate as someone thought that I might be able
to customize the commands for each piece of software. IDEAS?
