I am running XP Professional Version 2002 SP2. I'm not sure when my last XP
update was; it automatically updates and I haven't really paid attention to
what was updating.

You may have inadvertently changed some display settings. Right-click
on an empty (blank) area of your taskbar: If "Cascade Windows" or

When I click on Outlook to send the email, the word document is
showing behind Outlook, not my desktop.

It appears that there is some setting that when I click on a
program in the task bar, it was automatically minimizing anything
open allowing the desktop to show behind the program.
