How to move to a new disk ?

Currently I have XP Pro installed across two SATA disks in a striped array. I don't find that there is any noticeable performance improvement with the striped array so I would like to move it to a single disk. To do this I have a 3rd drive in the machine. Is there some procedure that I can follow to move my XP install to the single drive -- keep in mind that I need the RAID hardware drivers loaded to access the striped array.

Once I have it moved I plan on using the SATA disks for data and programs with the hope that three physical disks will provide better performance than the striped array.
