Permissions Question / File Sharing

Had to reinstall OS and restore some backed up files (to my documents, etc).

My question:

I was/am NOT using simple file sharing...

I am having a few irritating permissions issue crop up every now and
then...I can fix them, but things are a little jumbled on some restored
files.

IS there a way to "restore folder permissions to a default setting" such as
the system would do it from a fresh isntall?

My intuition says that if I invoke "simple file sharing", and possible
reboot, everything will revert back to a default state....

Is this thinking wrong?

My thought is, I could then switch BACK to NTFS sharing and have a good
starting point with all defaults back in shape, and divy out other sharing
as needed.

Am I wrong?
