I figured you knew since you said:

You don't necessarily have to erase the profile completely - although that
would be nice.
You could just go into the folder that you seem to know you don't use and
erase everything there.
Admitedly, 2.5GB of data seems excessive to me. I have seen some large
profiles in Documents and Settings, but most of the time the size was caused
by large desktop/my documents.

If you look in the user directories under "Documents and Settings", you will
see one file in the root of each called "NTUSER.DAT". The date on thsi file
represents the last time that file was written to and usually refers to the
last time that user logged in. If you look at each of them in line, you
should be able to tell which profile you have not used in quite some time.
Leave "Default User" and the other normal accounts. Only erase the ones you
recognize. Your current username should be obvious. If you had the
username active on the computer becfore you changed to a domain or if there
have been problems in the past with user accounts, you may have several
users with the same name but different extension: username.domain or
username.0000, etc. Carefully look through these and erase things you do
not need, move the things you want to keep into a directory outside
documents and settings.
