You have two options after booting a regular CD (not most OEM restore
ones though) and taking Install. After the license is accepted you are
offered 'repair installation', which is the thing to do in the first
instance. That will retain installed software and data (but back up
essential data first just in case) but will unwind all updates back to
the state of the CD used. So you will need to enable the firewall
before getting and installing critical updates (eg against Blast and
Sasser) and perhaps SP1.

Alternatively, take New Install. When it asks you to confirm where,
hit ESC; select and delete the current partition and make a new RAW one
to be formatted at the next stage

The important point is the delete. Without that it will just go ahead
and make a new install over the top of the old one, which will have lost
all the installed softeware's registry settings, so is *not* useful
