Two ways. You can go to Windows Update and on the left take 'Windows
Update Catalog' (you may need to check it in 'personalise update'
first). Then go to Updates for Operating systems, select Windows XP SP1
(get SP1 separately, see below) and you get to a panel where you can
put critical updates in a download basket to download and save.

Or when you get an update in the ordinary way, clear Temporary Internet
files first (for convenience) and when it comes to the point of install,
copy the downloaded .exe file out of there. That is the way for
'non-critical' ones

For SP1 either go to
http://www.microsoft.com/windowsxp/pro/downloads/servicepacks/sp1/sp1lang.asp
and get the complete 130 MB 'Network' download, or go to
http://www.microsoft.com/security/protect/default.asp
and order that on CD for free - you will have a delay for delivery, but
it includes all security updates to February, as well, I'm told, as SP1
