I may be a similar problem to what I'm having:

If you we don't have a monitor plugged into the PC when booting, it reverts to 640x480. This is a feature of the video driver, and I'm trying to figure out how to disable this in my image.

Next reboot it remembers that the VGA monitor wasn't pluggged in VGA will be black. I have to install new image to have the monitor working again.
I hope there is a solution to make sure that video is always outputted to the VGA?
