Actually no :-( To replace this string you would need to hack kernel binaries, and that is still illegal :-(

Actually, the licensing terms changed to allow you to replace the boot screen with your own.

As far as the "XP" -vs- "XP Embedded" screen difference, it's my understanding (and I may be wrong) that it was done to make localization easier. "XP" is a language independant name for the OS line. The word "Embedded" would probably need to be localized per language.
