I doubt it.
The Compatibility tab is intended for running old MS-DOS programs. It fools the old programs into thinking that they are running on Windows 95, 98, Me,NT 4.0 or 2000.
Run in 640 x 480 screen resolution...
[[Adjusts the screen resolution to 640 x 480 pixels while this program is running. When you close the program, the screen resolution setting will switch back to your default setting.]]
There are free utilitues that allow you to change screen resolution on the fly. Maybe one of those would be easier fro you Mother than right clicking the Desktop, clicking Properties, clicking the Settings tab and moving the Screen resolution slider.
You can set Apply the new display settings without restarting option by...

I have a 19" LCD monitor that I would like to give to my mother
someday. The optimum resolution is 1280x1024 pixels. However, she likes
to play PartyPoker, and the only resolution that looks good with that
program (in her opinion) is 800x600. If you increase the resolution any
higher, the text is hard to read. I've checked PartyPoker's game
settings, and do not see any option to increase the graphic or text size.
