How do I get that dialog to come back that asks me what I want to do when I
insert a disc or plug in my USB stick? Evidently, at some point, I indicated
not to display it anymore. I've tried searching for an answer but I guess I
just don't know what it's called.

Right click & choose properties on any of the optical drives or
removable sticks..........Choose all of what you wanna do in the
"AutoPlay" tab.
