Setup separate OUs for each farm of servers, then use loopback policy
processing to enforce a specific policy on users dependent on which servers
they logon to. In the policy you can redirect folders to specific places,
run different logon scripts and apply Policy Microsoft Office Templates with
the default save path you desire.

Post back if you're unfamiliar with loopback policies.
