Print server defaults to wrong paper size

We have a print server from which all computers always default to US Letter
paper size. You have to change document defaults on each pc which is a real
pain!
I believe the server was initially set up with US settings (by mistake!) but
later changed to UK - however the paper setting still persists.
Can anyone throw some light on this, maybe a registry change?
