It will complain about the missing second half of the mirror. Try it!

Yes, but it will still complain about the second half of the mirror.

Get a larger disk (they are cheap!), or use Acronis TrueImage.

Note that mirroring offers you lots of protection against disk failures
(which are very rare) and none against file corruption / virus damage /
hacker damage (which is much more frequent).
