What OS can I use with 4 CPUs?

Dear all,

I just recently inherited an IBM Netfinity 7000 Server.
It's a monster, physically. And not too fast - only 200 MHz CPUs.
However, it has 2 CPUs in it already and room for 2 more.

What server OS can I use that will utilize 4 CPUs?
I really would love to use Windows 2000 server - any edition. Can I
get use out of 4 CPUs with Win server?
