Data migration

I need to copy information from one EMC clariion array to
another, the attached servers are running windows 2000 and
will have storage on both array's with the boot drive
being on the server. Once the data is copied from one
array to the other the first array will be removed and the
server will run on the new array. My question is, what
type of tool can I use from the server to copy the data
over to the new lun's " disks". xcopy ? any info would be
helpful.
