I personally use Virtual PC at home for the SKUs you mentioned. If VPC isn't
enough, check out the Virtual Server version:
http://www.microsoft.com/windowsserversystem/virtualserver/evaluation/vmnews.mspx

Some people like VMware more, but VPC is sufficient for me.
