Are you more concerned about what you see while composing
the email message, or about what the recipient sees when he
receives the message? Those two concerns are different.
For the former, there is nothing you can do about it in
Windows Mail. The only fix would be upgrade to Windows
Live Mail:

details of recipients alongside the normal Display Nickname, for example;

How can I set the properties so that only the Nickname is displayed?
