I think they are all about the same. It's just a matter of syntax. I did some stuff in Python and I didn't like how it used indenting as a means of writing blocks of code. Perl is a lot like C so it was easy for me to learn. I used ActiveState Perl. PHP is very popular, but I've never used it.
I haven't tried this, but if you must use Unix for your server this looks interesting if you want to use the same syntax as a Windows server:
