Virtual PC will run entirely within your XP OS, so if you can boot to XP, you can install Virtual PC (it's just an application) and then load the free Virtual PC trial version of Vista into it. This will have nothing to do with your Grub.
My test is system is both multi-booted to Win2000/XP32/XP64/Vista32/Vista64 (using BootIt NG), and the XP32 installation also has virtual PC with various guests inside (Windows 95/98/Me/NT4 and the Orcas CTP) as well as VMWare Player with some "appliances" inside. It can get confusing if you forget what you are doing, but it all works.
