Set Due Date on a Workflow Assigned Task

I'm creating a workflow within Sharepoint Designer 2007 and having
some trouble with assigning a due date on a task.
In my workflow I created, I'm using the "Collect Data from a User"
function in a step. It creates the task and sends out the email to
the assigned user that the task is created and asks for two pieces of
information. The Due date for the task however comes up blank and
can't be editted by the user. Anyone know how I can actually assign
the due date within the workflow....the due date is actually entered
into the initial form that starts the workflow so I have access to
what the due date should be, it's just assigning it into the task due
date field that i can't seem to get.
It seems so simple and yet I've yet to find how to set that date.
