I've made some step forwards.....
Now the Windows SharePoint Services Search starts....
I followed this document http://support.microsoft.com/kb/923896/en-us
it apparently deleted the old db, and when I did restart the service,
(that was already correctly configured) it created a new database
called WSS_Search_<SERVERNAME>.
I've been able now to associate the Server and search function now
works correctly.
Have still to make some more checks, and re-enable PDF filter, but
looks like this is the way to follow.

Hi,
we are still unable to start searches.
Our service is in STARTED status, we have also rebooted but as
expected, nothing changed.
In Manage Content Databases , our Database Status is STARTED
While in Central Administration > Operations > Services on Server
Windows SharePoint Services Search "Required on Farm, not running"
Stopped

Hello Dave,
Do you mean the service's status is still "starting"? If you perform a
reboot on the server and check the service's status, will it be started
correctly?
