I've made some step forwards.....
Now the Windows SharePoint Services Search starts....

I followed this document http://support.microsoft.com/kb/923896/en-us

it apparently deleted the old db, and when I did restart the service,
(that was already correctly configured) it created a new database
called WSS_Search_<SERVERNAME>.

I've been able now to associate the Server and search function now
works correctly.
Have still to make some more checks, and re-enable PDF filter, but
looks like this is the way to follow.
