For what you want you should choose the Basic Site (or whatever the name is)
template rather than the Team Site template when creating the site.
If you have already chosen the Team Site template and don't want to delete
the site and start again, then you can delete the web parts that appear on
the default.aspx page; remove items from the menu etc. (all manual work)
You can do most of this in the browser. SharePoint Designer might be a
quicker method though (?)
