It's hard for us here to specifically answer either question because we
don't know how following those instructions will affect the unique version
of WSS that SBS 2003 uses.
If you are happy to use the standard version of WSS (/SPS 2003) and miss out
on the things that only the version of WSS that you get with SBS 2003 (such
as the Fax support and the whole "companyweb" thing), then I doubt if there
is any alternative to following the instructions that Microsoft provide to
first remove WSS (after saving the databases - if I remember right) and then
install SPS 2003 and re-connect to those databases.
People who have done that already will be found in the SPS 2003 newsgroup at
microsoft.public.sharepoint.portalserver (and the SBS newsgroup is
microsoft.public.windows.server.sbs if you don't want to lose Fax support
etc.)

I am starting to wonder if it would be easier to simply remove SharePoint
services from the machine and install SharePoint portal from scratch.

Does anyone have an idea if removing the Windows SharePoint Services and
installing with a fresh copy of SharePoint Portal be easier than following
the instructions in the instructions provided for the SharePoint services
to
Portal installation?
