So why should I use Windows Server at all for the team? Just an old Windows
3.11 or 95, machine and it will do the job as a great server with more
control on the permissions than share point, that's in Windows 2003 Server
that is out there 10 years after 3.11 or more.

I am a big fan from Microsoft, and products like .NET/SQL Server/VS are just
brilliant, but in 2003 - 2005 some of their other products just drives you
mad, someone there is just not getting it; when you introduce a file system
as powerful as NTFS (security and file management, "except search") in
Windows 2003, and then introduce a new file system in SharePoint over 2003,
you expect it to be with the same power or much powerful, not less.

It's like you go to buy this year's car, and you'll get it without most of
the thing in the last year's car, but with better colors, and a more cute
(no safety or airbags "you should not drive fast", no looks, no tiers, and
three seats) but it looks better and supports http, who cares, where are the
real features?
