you mentioned not which version of office you are using, so my answer is
based upon office 2003....
Updating is done in one area only - from the calendar within sharpoint.
Outlook only allows read only view on this information.
this funtionality is new for Office 11 and is not supported for Office XP or
Office 2000. Outlook synchronizes with shared team calendar and contact
lists in SharePoint sites. The synchronization is one-way from Windows
SharePoint Services to Outlook. Once the shared team calendar or contacts
are synchronized to Outlook's local cache, the user can view the shared
calendar side-by-side with other personal or shared calendars. Information
from SharePoint sites can be viewed in Outlook while offline. Data
synchronization happens automatically to ensure that the view in Outlook
stays up-to-date relative to the content on the server running Windows
SharePoint Services.
