I discovered a way to do this when I was messing about with web parts. (But
see rider)
It's a bit hairy and is tricky to get to work but once working it's fine.
Assuming left hand is a web part with what you want to select on and right
hand is the web part with fields you want to see and one you don't want to
see.
Looking at the right-hand web part: There seems to be a "feature" in web
parts that not all fields you select for a web part (*when choosing fields
from a database*) are actually visible in the web part on the screen. They
have however been selected and therefore *are* available for the connecting
web part.
So by messing around and with luck in your choice of selecting fields you
could have the situation where what this user wants does happen!
[Aside: I usually need the fields that are not being displayed to be
displayed and I go in and add them by hand to the Source]
Rider: This has happened when getting fields from a database *only* - plus
it will probably be corrected in any SP ...
