The problem is that I can't add them as a user in Active Directory mode.

you suggested that I use the GUI, but the Gui does not support adding users
in this mode, so I use stsadm. When I use stsadm -o adduser I must provide
an email address, I want to use the persons current email address at their
company, but unless I use an email address which is on my SMTP I get the
error...
