You need at least Office XP in order to use "Edit In".
If you have Office XP and it still isn't working then you might need to
specify SharePoint support (run setup and it is in the Office General
functions (or similar name) section near the end.) although I'll confess I
thought that needed to be specified only for WSS not STS.
