The installation account is in the farm administrator group by
default.
The strange thing is that when I log on using the Central Admin
service account I succeed in creating the SSP, but of course now I
want to do this with the installation account, who is local admin of
my WFE and my SQL box and is member of the farm administrators group.

All you should need is local admin on the local box for the proper
local
access on the WFE.
Try adding that account to the Sharepoint Administrators group on the
operations pannel.

I'm trying to do a unattended installation of MOSS 2007. But when I
want to create a SSP using the stsadm createssp I get an access
denied. Even if I make the service account admin on my SQL box as well
as my WFE I still get access denied. Does somebody know what
permissions I need in order to create a SSP using stsadm??
