Also, when you create your separate sites you will need to select to not "use
parent site permissions" and then you can create separate groups for each
individual site.

Sites can have specific permissions.
So you can specify exactly who is allowed to access Site 1 (one list
which can include individual users; Site Groups; AD Groups) and who is
allowed to access Site 2 ( a different list of individual users; Site
Groups; AD Groups)
Thusfor instance the list for Site 1 could include Site Group 1 but not
Site Group 2 and the list for Site 2 could include Site Group 2 but not
Site Group 1. (or AD Groups or individual users)
Does that make it clearer?
If not someone else will have to come in.

Sorry but I don´t understand you what is "Standard stuff" is a kind of
user group? i can´t find any kind of permission that specify if you
can access to a site or not.
Our sites are.

http://<ourhome>/Site2/
http://<ourhome>/Site3/
And when i add a user to a usergroup the only kind of permissions are
this
Full Control - Has full control.
Design - Can view, add, update, delete, approve, and customize.
Manage Hierarchy - Can create sites and edit pages, list items, and
documents.
Approve - Can edit and approve pages, list items, and documents.
Contribute - Can view, add, update, and delete.
Read - Can view only.
Restricted Read - Can view pages and documents, but cannot view
historical versions or review user rights...
View Only - Members of this group can view pages, list items, and

And if i try to edit any kind of permissions only have this options
for a site
