MOSS 2007, IP 2007 & Office 2003 ?

Hi All --

I am about to begin a project using MOSS 2007 that has some fairly
involved workflow. I plan to use InfoPath 2007 (most likely) as the
data collection method & then Designer or VS 2005 to build the
Workflow. The Workflow basically involves Users approving/rejecting
Application access, updating Action Items and similar.

My question is: is this all possible given that the company does NOT
plan on deploying Office 2007 this year ? My Beta would need to use
Office 2003 / IE as the platform. I don't think there is a need for
digital signatures...just filling out an InfoPath 2007 form or (later
in the WF) updating a custom list on MOSS 2007 prompted by e-mail
alerts in Outlook 2003.
