Ok, again, thanks for your helpfull post. It helps to know that I'm
basically on track here.
I guess my question boils down to this...
Is there any way to keep a Publishing content page attached to a layout
which is configured to use the site master page, yet change the Master page
for that one particular Publishing content page?

Your understanding is correct. But as an alternative you can try out
this. Go to
Site Settings->Master page. There you can set your own *custom master
page* as the
default master page and force the already created pages and new ones to
inherit that master
page. I hope that would help.

change the master page of a content page created this way, the master page
never actually changes when it is rendered although SP designer does show
that it should be using the master page that I specified. Why? Is there any
way to change the master page of an individual content page when that content
page is part of a publishing site?
You can force an individual content page to detach from the layout page
using sharepoint
designer. This functionality is inbuilt using SPD. But I would suggest
you to create your
own custom layout page which will be using your new master page, and
let all your new pages inherit out of your custom layout page.

You can use the sharepoint designer. The options are greyed out because you
must be in contributor mode. Go To Tools->Contributor settings and check
Allow unlimited use of sharepoint designer.
