Thanks for the info!

One short question: What should I do with the config db? Should I copy
that one as well or should I create a new one?

I've tried a similiar approach to the one suggested but I got stuck on the
restoring process with a security error. Even though I used a domain admin
account at that time.

Here is the process that i have used with success...

1. in central admin, go to the SPS section and click on "Remove Portal
Site"
2. select portal site to delete and choose to NOT delete the databases

note: this should only remove the portal from the configuration
database your data is safe in the content (site,prof,and serv)
databases. also you don't have to do these steps if moving to another
server farm, you can just copy them over.

3. Detach databases from sql and copy all database (MDF) and log files
(LDF) over to the new sql server. you should be copying them to the
virtual node, not the acutal clustered nodes)

4. attach the databases to the new sql server.

5. Go into the SPS central admin and click on "Create Portal Site" and
select restore portal site.

6. Enter in the database names in the specified locations and enter in
the correct sql server (remember if you are using a custom instance you
will need to specify sqlservername\instance)

7. select the virtual server you will be using to restore the portal to

8. click ok.

it should go through all the restore processes and as long as you have
the virtual server setup like the one on the old server (web.config
safe controls and custom assemblies) it should go through without a
problem. Also make sure you are on the same domain or at least on a
domain that trusts the old domain.
