Greetings,

Not sure if this is the definitive answer, but I got it working!
Re-installed WSS, but this time I selected "Server Farm" instead of
"Typical". When you select "Typical" SharePoint automatically extends
the first Web Server listening to port 80 which in my case was the
"Default Web Site". Selecting "Server Farm" exposed the default web
site and allowed me to extend it myself.
