Well, if you take db backups, then it is possible to extract a single
document with a third party tool. I will release a tool today or tomorrow

No experience with that software, but here's how I manage this in our
fairly small deployment (2000 users). I ensure that we are using
multiple content databases and that thier size never exceeds 100GB. I
do this with a combination of site quotas, site per content database
limiting, and use static-sized SQL databases as a fail-safe.

To do a document restore, you determine which content database the site
was in, then restore your SQL backup (assuming you do scheduled
backups) to a development server. I have a separate IIS virtual server
set up on a different port, and restore a new portal site to this
virtual server. Find the document and put it back in production.

Note that I also use NinTex smartLibrary to provide my users with a 14
day recycle bin and repeatedly emphasize that a restore operation will
take up to a day and will not be considered until after 48 hours have
gone by. I find that most users really don't need to restore files most
of the time and only ask because they are unsure and are erring on the
side of caution because they think it is simple.

I've heard the DocAve is the gold standard for single-item restore if
ou are looking to buy a solution.
