I think you should explore storing the files within SharePoint a little
more. You can access them using explorer just like you would if they were
on a file system. So for your archive process there shouldn't be any
difference. The other thought is you could archive the whole site then and
burn that to DVD. Then you have captured completely everything that
happened in the project in 1 place. If they decide they need to review it
you restore the site and they are right back where they were with it the day
the project ended.
