Deleting default web site and unused application pools

Hi all

I have configured our SharePoint Portal Server 2003 installation under IIS as follows:

Created a web site named NIHEportal
Created an Application Pool named NIHEportal
Congured NIHEportal website to used NIHEportal Application Pool

This is all to allow for future scaling into a web farm.

My question is, is it prudent and advisable to now delete the default Web Site created by IIS and also the unused Default and MSSharePointPortalAppPool Application Pools?? or will this have an adverse affect on my SharePoint Portal Server 2003 web site.

At present I have the Default Web Site and the unused Application Pools stopped (but know that when the server reboots these will start again) Is there anyway to disable them from restarting when the server reboots??
