You can install Virtual PC and then install Windows 2003 on the virtual and use the steps highlighted before to set up SharePoint as a stand alone. There are also VPC images on the Microsoft site that will get you most of the way there.

Also, since MOSS server has high requirement on performance, I think 2GB
