In short,you are stuck with it.That is,unless you'd like
to learn how to understand e-mail headers.However,with
who-knows-how-many computers out there host to trojan
proxy servers,or worms with their own smtp
engines,headers can be a hiding to nothing:

Hopefully,in time,software filtering/mail delivery
systems will become more sophisticated in order that
firstly,the genuine address owner doesn't get the spoofed
bounce backs or an infalible method of screening is
implemented at I.S.P level to stop viruses being
delivered,full stop.
I guess that'd just mean more network based worms,though.
In the meantime,just set up filters at server level,by
configuring rules in the account from which your client
downloads messages,or install a filtering programme that
allows you to view and delete unwanted messages from the
server,without them being downloaded and taking up space
on your harddrive.
I used X-Terminator from ArtPlus for a long time and
loved it(it's free):
