Mixed Mode vs Windows Authentication Mode

When installing the server, one of the screens asks to choose between Windows
Authentication Mode or Mixed Mode (Windows Authentication and SQL Server
Authentication). What exactly does this do to the setup? It appears that
regardless of which option used, one can create a userid in Enterprise Manager
that is not a Windows userid and assign that userid as a db_owner. I am having
difficulty understanding what the difference in functionality is based on that
setting? Is this something that sp3a changes?
