There are a lot of bugs related to the maintenance plans so make sure you are running the latest service pack (tested of course). You may need to drop and recreate the plan altogether if it doesn't save it by just editing it.

Basically we have an SQL server that was running full backups and hourly
transaction backups together. Then about a little over a month ago we found
this.
-> when you go into the backup plan (SQL Server 2005) and edit the database
list on the plan, the changes are not saved when you come back.
First I thought this was a user problem or an security problem so I created
a test database and tried the same thing and got the same results. we can't
add or change an existing backup plan for hourly transaction backups.

Our databases are running with a FULL recovery Mode. its SQL Server 2005.
And I'm logged in as Window's Administrator under mixed mode.
