You could certainly do this yes using DTS yes but it smacks more of being something for which I would use replication.

I have machines in a network with MSDE on them. The databases on these
machines use the same schema. I would like to setup a central SQL server to
poll these DBs and copy selected data and adding the machine name in a field
to identify the data, so I can query the individual machines data and cross
reference, etc. I would like to know if this would be possible using DTS?
Also could there be an LDAP lookup or other to an Active Directory OU to
pull the machine names that I wish to copy the DBs from.
If all this can be done, how difficult would it be not knowing DTS but with
good SQL and scripting skills.
