Well, I do not know the possible workload on your server so I don't have any clue about how it is going to work.
I suggest you to install R2 to your Windows Server 2003 if you have not.

I think I have to go to Symmetric Key becuase I also want good performance, Sql Server 2000 already installed into that Server and I am going to install SQL Server 2005 as a Named Instace. Here is my server configuration, What is your thought.

If you are looking for a tough encryption (this brings performance degradation), then you could use Certificates \ Asymmetric Keys,
If you are looking for an encryption (which is not as powerful as the previous ones) which does not affect performance as much as the others, then you could Symmetric Keys.
It's your choice. But both of them asks for a sacrifice from your system.

I have a SQL Server 2000 on my production machine and contains 31 databases, one of the database contain most critical information, now our organization wants that database should be encrypted, just because of that I am going to installed SQL Server 2005 side by side installation on the same box and restore that database into SQL Server 2005 and implement the encryption, I would appreciate if any one of your guide me the better approach or what sort of information I have to be considered before installing and implementing this.
