I'm going through documentation on-line, and not sure if I can install SMS
2003 on Windows Server 2003 R2 + SQL 2005?

Yes, no problem.

1. I don't have SMS 2003 with SP2 so, I will have to install SMS 2003,
then
upgrade to SP2

That's a problem. You'll need to obtain the SMS 2003 SP2 slipstream edition
to install directly to SQL Server 2005.

2. Then install ITCU (is this supported without SMS 2003 R2 or stay with
ITMU?)

ITCU is part of the SMS 2003 R2 release, you'll likely want ITMU as well for
the regular patch management capabilities.

3. OSD FP Update
4. Perform ZTI to get Win2K clients up to WinXP
