Actually there is an orderly removal process but I'm not sure anyone has
clearly documented it.
If someone has other gotchas or tips here please jump in.

It goes something like this:

For SMS 2.0 you first want to disable logon discovery and installation and
then wait until logon server manager has removed all bits from all the
domain controllers in the environment. Meanwhile, remove all boundaries and
disable/deinstall all remote site systems - CAP's, DP's etc. Clients should
de-install within about 24 hours when they find no boundaries for their site
on the next CCIM polling cycle so wait a bit longer than that, plus any time
for site-to-site propagation.

After that happens, you can de-install your hierarchy from the bottom up,
removing secondary sites then working up to the central site.

You may need to manually clean up some distribution points and logon points
and a few clients (the ones that are probably broken anyway).
