I realized later that there is another workaround to consider that might be
better.
If you do resize your current publication and loose that added
'functionality', rather than create a new publication and copy and paste
your content over as suggested, instead create a new publication based on
your original template, insert the pre-designed template pages that are
available such as the forms, FAQ, Products, etc, and then copy and paste
those into your original publication. This way even though you loose those
options in your original publication, you can still access them and
incorporate them if you need them. Hope this helps.

Thanks for answering both questions. That allowed me to experiment without
fear of 'breaking' Publisher 2007, which is the reason I backed out of the
changes the first time I tried to reproduce this, and was left with those
questions.
I guess I also would call what you and Amanda have spotted a 'bug', but
suspect that MSFT would call it 'by design'. In other words, they intended
it to work this way in Publisher 2007, but that doesn't make it good in my
book. Bottom line is that if you want to change the width or length by
either clicking the button as you did, or by doing it under File > Page
Setup as I suggested, the results are the same. You will loose that added
functionality, because you are breaking the connection with the Publisher
wizard associated with the original template. You will still be able to
preview your site and you can insert a page, but you won't be able to
insert one of those custom template page options you are given with the
publication still connected to the original publication wizard.
This did not work this way in Publisher 2003 and personally I think it was
a step backwards, rather than an improvement. The way Pub 2003 handled it
wasn't perfect though. If you widened a page in Pub 2003, the content of
your page would be centered on the new wider page which required you to
select everything, group it, and then drag it back to the left edge of the
page. If you shortened or lengthened the page the content was left either
above or below the top of the new page, and once again you had to group it
all and drag it back into position. Still, even with these hassles you
retained that 'added functionality' that you loose in Pub 2007.
There also isn't a great workaround for this either...that I can find.
First of all, as I said in my original post, I wouldn't worry about
shortening the page. As I said, your pages will only be as long as the
content on the page when you convert the page into a web page. However, if
you need to lengthen the page or widen it, then you have some work ahead
of you. The only way I can think of right now to end up with a wider or
longer page...or shorter if you must, and have the added functionality, is
to create a publication with your original template design and copy and
paste your custom content over to the new publication from the original.
Yeah, kind of sucks I know. I hope that MSFT goes back to something more
like Pub 2003 in the future. Sorry, but I doubt that you will be happy
with my answer this time either...

I forgot to respond directly to your question: Are you saying that
those options are permanently lost after saving, closing

The answer is yes. Those options are permanently gone after you change
page size, then save it then re-open the document.
