Tools/Tracking/Save Baseline...
You can then compare your baseline dates to current dates. The easiest way
to do that is from the Tracking View. View/Tracking Gantt
There is a whole world in MS Project that can help you track your schedule
and cost performance compared to your baseline. Search on the term "Earned
Value" in the Help and on a search engine such as Google or Yahoo.
